  • 2 tsp toasted sesame oil
  • 1 tsp fresh minced ginger
  • 2 cloves minced garlic (about 2 tsp)
  • 1/2 stick unsalted butter
  • 3 tbsp raw honey
  • 1/4 tsp Thai roasted chili paste (or red pepper flakes)
  • Juice of half a lemon
  • 1 tsp cornstarch
  • Olive oil or avocado oil spray

Equipment

Air fryer, Sharp knife & cutting board, Mixing bowl, Small saucepan, and Whisk.

Instructions

Prep the fish

Rinse your salmon and pat it completely dry with a paper towel. Carefully slice off the skin. Cut the fish into even, bite-sized cubes.

Mix the marinade

In a bowl, mix the soy sauce, sesame oil, ginger, and garlic. Toss the salmon cubes in this mix until they are fully coated.

Heat the air fryer

Make the sauce

Melt the butter in a small pan over medium heat. Stir in the garlic, soy sauce, honey, and chili paste. Squeeze in the lemon juice.

Thicken it up

Mix the cornstarch with a tiny bit of water in a small bowl to make a slurry. Pour it into the pan and stir for 1 to 2 minutes until the sauce gets a little thick and glossy.

Cook the bites

Place the salmon cubes in a single layer. Give them room to breathe. Add the sauce, leave a little of the sauce to toss the cooked salmon in). Cook for 8 to 9 minutes. If your air fryer only heats from the top, shake the basket halfway through.

Put it together

Toss the cooked salmon cubes in the rest of the warm sauce until they are fully covered. Serve immediately and enjoy!

Storage

Keep leftovers in a sealed container in the fridge for up to 3 days. Then, warm them up gently in the air fryer or microwave to bring back that nice texture.

Frequently Asked Questions

Can I use frozen salmon?+

Yes, just thaw it completely and pat it very dry before cutting it into cubes. Wet fish will not get crispy

Do I have to remove the skin?+

It is much easier to eat if you take the skin off before cutting the cubes, but you can leave it on if you prefer.

How do I know when the salmon is done?+

The cubes should flake easily with a fork and reach an internal temperature of 145°F.

Can I make the sauce ahead of time?+

Yes! Make it a day before and warm it up right before serving. You might need to add a splash of water to thin it out again.

Dinner does not have to be hard. These salmon bites are proof that you can make something restaurant-quality right at home with very little effort.
