  • 8 eggroll wrappers
  • 5 oz crab meat (ready to eat)
  • 10–12 shrimp, tail off & deveined
  • 8 oz cream cheese, softened
  • 4 tbsp butter
  • 6 oz shredded parmesan cheese
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • ½ cup red bell pepper, chopped & sautéed
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp chili powder
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Seafood seasoning (for shrimp)

Instructions

Sprinkle your shrimp with seafood seasoning. Heat butter in a pan over medium-low heat, add shrimp, and cook until pink and curled into a nice “C” shape. Let them cool and then chop them into pieces.

In a large bowl, combine the cream cheese, seasonings (garlic powder, onion powder, salt, pepper, chili powder, Italian seasoning, smoked paprika), crab meat, chopped shrimp, parmesan cheese, sautéed red bell pepper, and minced garlic. Mix until well combined.

Place about ¼ cup of the filling in the bottom corner of an eggroll wrapper. Wet your finger with water and draw around the edges of the wrapper to help seal. Fold the bottom corner over the filling and tuck it under. Fold in the left and right corners, then roll upward to finish sealing.

Heat oil to 350°F and fry the egg rolls until golden brown and crispy. Remove and drain on a paper towel.

Storage

You can store leftover egg rolls in an airtight container in the fridge for 2–3 days. Reheat in a 350°F oven for 8–10 minutes to keep them crispy. Freeze them before frying and just thaw and fry when ready.
